Hiroki Shuzo Honten, founded in the mid-Edo period, is a legendary brewery in modern sake history, standing quietly along the Echigo Highway in Aizu Bangemachi. From a crisis once facing bankruptcy, it achieved a dramatic revival that rewrote sake history through the brand "Hiroki," created with the passion and tenacity of the 9th generation, Kenji Hiroki.
Their greatest distinction is the pursuit of "reproducibility" and "ideal transparency" polished to the extreme. With the ultimate mission of "giving the same impression no matter how many times one drinks," they pour their soul into the initial processes like rice washing, water absorption, and steaming, implementing thorough temperature control in all cooling-managed tanks. The "Muroka Nama Genshu" (unfiltered raw) style, which they presented to the world in 1999 and quickly swept the nation, balanced juicy rice umami with a vivid crispness and noble aroma, establishing the mainstream of modern sake.
While "Hiroki" is the protagonist soaring across the nation, the local-limited "Izumikawa" is the best supporting actor staying close to the dining table. Their drops, where traditional skills and innovative spirit harmonize without any compromise, are truly Aizu's pride and a supreme artwork that can be called one of the goals of sake.
