Their most distinctive feature is placing the traditional "Yamahai-shikomi" (natural yeast starter) as their main brand, which is rare in Fukushima. Particularly, the "Kaze ga Fuku" (The Wind Blows) series—using 100% JAS-certified organic "Gomangoku" rice carefully grown by the local agricultural corporation "Mu-no-Kai"—is the brewery's synonym. The fusion of precise rice farming, adjusting fertilizer for each field, and powerful brewing fermenting only with naturally occurring lactic acid creates a "true organic sake" where deep umami and sharp acidity resonate.
