Seki Shuzo is a historical brewery founded in the late Edo period in the castle town of Kameoka, Kyoto. With the store name "Idugen," they have sincerely protected the sake brewing that started as a side business while contributing to the region as a major landlord since old times.
Within Kameoka's historical cityscape, they are thoroughly committed to "hand-made" brewing, which is distinct from mass production by mechanization, practicing sake brewing where a soul is put into every single drop despite the small scale.
In particular, they adopt the traditional method of "Fukuro-shibori," where bags filled with sake are hung and drops are gathered by natural gravity alone. They devote their heart and soul to drawing out the purest and smoothest mouthfeel inherent in rice without any off-flavors.
Towa Shuzo's sake, where the traditional castle town culture and Tamba Toji's skills live in the present, is like an artistic drop full of sincerity nurtured by Kameoka's climate.
