Michizakura Shuzo is a unique brewery that relocated to Higashikawa, Hokkaido in 2020 via a public-private partnership after 140 years in Gifu Prefecture.
Using pure subsoil water from the Daisetsuzan Mountains and rice grown in Higashikawa's rich soil, it pursues 'Higashikawa Terroir' reflecting local individuality.
The beautiful wooden facility fuses traditional handmade methods with modern equipment, creating clear sake where natural rice sweetness and umami harmonize.
It is a brewery continuing new challenges, allowing one to experience the terroir of Higashikawa through all five senses.
