Founded in 1805, Kamisugi Shuzo is the only sake brewery in Anjo City and a long-established house that protects the brewing culture of the West Mikawa region.
Committed to brewing with "local rice, local water, and local craftsmen," the brewery uses mostly Aichi-grown rice, especially "Wakamizu" and "Nipponbare" from local Anjo. They draw clear underground water from the Yahagi River and carefully pass down traditional manual techniques.
With high-level brewing skills not only for refined sake but also for authentic mirin and shochu, they continue to pursue the "Sake of Anjo's Heart," deepening ties with the local community through events such as the Anjo Tanabata Festival and New Sake Festivals.
