Hamada Shuzo, widely known for producing authentic shochu, has taken on the challenge of sake brewing to further evolve its distillation expertise and to bring new value to the food culture of Southern Kyushu.
In Kagoshima, known for its warm climate, sake brewing—traditionally associated with colder regions—was considered extremely difficult. However, through proprietary temperature control technology and substantial equipment investment, the brewery has made sake production possible in this southern locale.
The Toji (master brewer), after training at a sake brewery in Nagano Prefecture, established a brewing approach suited to Kagoshima's terroir. By fusing traditional techniques with cutting-edge brewing technology, the facility produces sake of distinctive character in the heart of Southern Kyushu.
Its flagship brand, "Sasshu Masamune," uses Kagoshima-grown rice and local water to achieve a uniquely warm and approachable flavor profile, harnessing the fermentation expertise cultivated through generations of shochu production.
