Kaito Otokoyama Shuzo, founded in 1716, is a rare venerable brewery that has carved out over 300 years of history in the harsh mountains of Minami-Aizu.
Its name derives from the third-generation head Harumasa Watanabe (using the characters "Kaito"), who was the restorer of the brewery, symbolizing the craftsman's soul and spirit of innovation passed down through generations. Brewed with Oku-Aizu's pure natural water and the local severe cold as an ally, its sake features a sharp, clean drinking profile resonating with a solid rice umami.
