Kasumitsuru Co., Ltd. is a leading brewery in the Tajima region founded in 1725 (Kyoho 10), with a history of about 300 years.
Located in Kasumi, a fishing port town facing the Sea of Japan, it pursues sake brewing that complements local ingredients such as seafood like Matsuba crab (Kasumi crab) and Tajima beef.
Since 1967 (Showa 42), it has specialized in Tajima-style Yamahai production, and is a rare brewery nationwide that brews all sake using Yamahai or Kimoto production.
Since the 2011 brewing year (Heisei 23), it has also revived Kimoto production, practicing sake brewing with deep flavor using traditional brewing methods.
Yamahai Ginjo Junmai is highly evaluated both domestically and internationally, winning the Gold Prize (3 consecutive years) in the Junmai Ginjo Category at the Feminalise World Wine Competition 2023 and the Highest Gold Prize in the Premium Warmed Sake Category at the National Warmed Sake Contest 2022.
