Suminoi Shuzo

Suminoi Shuzo, established in 1758 (Horeki 8), is a venerable brewery in the Yoshizaki district of Nagaoka, Niigata, with over 260 years of history. It once earned great acclaim for its character-rich sake 'Suminoi,' which featured robust umami and acidity achieved through traditional Kimoto-style Yamahai brewing. Today, leveraging its highly sophisticated brewing techniques cultivated over centuries, the brewery specializes in the production of 'Hon-mirin' (authentic cooking sake) using rare sake-based methods. While preserving historic brands like 'Waramasu,' which was highly celebrated in Niigata during the Taisho Roman era, the brewery continues its sincere craftsmanship, meeting modern needs while honoring tradition.
