Murayu Shuzo is an extremely small brewery surrounded by the rich nature of Kosudo in Akiba-ku, Niigata City. Its annual production is only about 200 koku (approx. 36,000 liters). Sticking to the stoic philosophy of 'not increasing production but brewing carefully within sight,' it conducts highly rare sake brewing through limited distribution only to authorized dealers.
The taste released by owner-brewer Kensuke Murayama brought a vivid revolution to the sake world as an antithesis to Niigata's traditional 'Tanrei Karakuchi' (light and dry). The original worldview, where elegant and multi-layered sweetness reminiscent of high-grade 'Wasanbon' sugar and sharpness coexist, has established a one-of-a-kind genre called 'Murayu.' The policy of not disclosing any specifications such as the type of rice or polishing ratio is an expression of a sincere wish for people to taste the impression of 'delicious' purely without prejudice. It is a supreme brewery boasting cult-like popularity that has greatly expanded the diversity of Niigata sake.
