Kubota Shuzo is a historic brewery founded in 1868 (Keio 4), located in Kabe, Asakita-ku, Hiroshima City. Backed by the deep mountains of the Chugoku Mountains, sake brewing continues in a rich natural environment at the confluence of the clear streams, the Ota River and the Nenotani River.
For brewing water, underground water from the Ota River gushing from the family's diamond-shaped well is used, and Hiroshima Prefecture's sake brewing rice such as "Senbon Nishiki" and "Hattan Nishiki" are carefully selected for raw rice. By long-term low-temperature fermentation with the skill of a skilled Hiroshima Toji (master brewer), a fragrant and sharp taste is created.
The representative brand "Hishi Masamune," said to have been named by Prince Takamatsu (Nobuhito) in commemoration of the 100th anniversary of its founding, is also known for the symbol mark of "Pine" and "Diamond" designed by the artist Shiko Munakata. It is one of Hiroshima's representative sakes, harmonizing gorgeous and mellow aroma, mellow mouthfeel, and sharp aftertaste.
