Hirota Shuzoten (currently Shiwa Shuzoten) is located in Shiwa Town, inheriting traditional sake brewing in the place known as the home of Nanbu Toji. It is characterized by sake brewing by the 5th generation brewery owner Hidetoshi Hirota and Yumi Ohno, who became the first female Toji as a Nanbu Toji.
The representative brand "Hiroki" holds the concept of "Sake widely (Hiro) enjoyed (Ki) by many people," and they are making innovative efforts such as switching all Hiroki brands to a brewing method called "Sanki Amazake Moto" (Acidified Sweet Sake Starter). The new brand "Shichu" is deployed as a limited distribution product using Iwate Prefecture rice and Iwate Prefecture's original yeast "Giovanni no Shirabe."
