Their greatest commitment lies in their thorough 'rice washing.' Pursuing the processing of ingredients to the extreme, they completely wash away the bran, especially for high-end sake like Ginjo and Daiginjo, to draw out the pure umami of the rice. For brewing, they use high-quality water from the nearby Sakuranozawa spring, from which iron is removed using original methods. Furthermore, by brewing all products with 'Shizuoka Yeast,' they achieve a refreshing, fruity aroma and a gentle flavor that stays close to the dining table.
