Their flagship brand, 'Aoi Tenka,' combines the 'Aoi' (Hollyhock) crest of the Tokugawa clan with the ambitious phrase 'Tenka wo Toru' (conquering the world). It represents the joy of enjoying fine sake in a peaceful society. Since 1985, they have revolutionized their brewing to focus on premium Ginjo sakes.
The brewery remains committed to traditional methods, such as steaming rice in Japanese cauldrons ('Wagama') and using traditional presses ('Fune-shibori'). Using 'super-soft water' from the South Alps, they craft sakes with delicate, high-quality flavors that have won numerous awards domestically and internationally.
