Saijo, located in Kawachinagano City, Osaka, is a brewery that has preserved its traditions for about 300 years since its founding in 1718 (Kyoho 3). In a historic town where Kusunoki Masashige once played an active role, it still retains its atmospheric sake brewery, which is designated as an Important Cultural Property.
The brewery's signature "Amanosake" follows the lineage of the legendary "Soboshu" (temple sake), which was brewed at Amanosan Kongo-ji Temple during the Muromachi period and captivated Sengoku daimyo such as Oda Nobunaga and Toyotomi Hideyoshi. Their achievement in reviving this flavor, which had once ceased during the Edo period, based on ancient documents is significant, and their brewing is characterized by a breathing historical romance.
Focusing on high-quality raw rice, the exceptional techniques of the Nanbu Toji, and unsparing "Junmai-zukuri" (pure rice brewing), they pursue the original powerful umami and mellow richness of rice. In particular, the revived Soboshu is characterized by a rich sweetness and acidity that stands apart from modern sakes, gaining high support from sweet-sake lovers.
While protecting the historical heritage of Kawachinagano, they are a brewery that can be called a rare historical storyteller of Osaka, conveying the origins of Japanese sake culture to the present day.
