Ishii Shuzo, founded in 1840 in Satte City, Saitama Prefecture, is a brilliant brewery where tradition and innovation vividly intersect. In Satte, which once flourished as a post town on the Nikko Highway, it has spun over 180 years of history while known for its challenging attitude of constantly re-questioning the value of sake.
Currently led by the young 8th generation brewer, it brews with flexible ideas not bound by existing frameworks. Using clear groundwater from the Tone River system and making use of the softness provided by Saitama's soft water, it features a transparent and gentle taste. The greatest charm is the planning ability to redesign sake with modern sensitivity. It continues to fascinate new-generation fans with playful projects such as "Nisai no Kamoshi" based on the concept of "brewing only with a young team in their 20s" and "Chou Chou Chou" crossing French "Chou" (cute) and Japanese word for sake.
On the other hand, it also adheres to sincere brewing that cherishes local history and culture, such as "Houmei" brewed by reviving the phantom sake rice "Shiromemai" and "Gongen zakura" imagining the cherry blossoms of Gongendo, a regional symbol.
