Approximately 70% of the brewing rice is locally sourced, primarily using Oita Prefecture's unique sake rice varieties Oita Mitsui and Gin no Sato. The revived phantom sake rice Oita Mitsui is a special variety restored from a handful of seed grains after it had disappeared. By brewing with this historic sake rice, the brewery expresses Oita's tradition and innovation.
