Most surprisingly, nearly all of their sake (about 98%) is consumed within Kitakata City. With the supreme mission of brewing sake that "locals can truly be proud of and enjoy every day," they strictly adhere to brewing that stays close to Kitakata's climate, food culture, and the preferences of its people.
They are committed to careful manual work, using 100% handmade koji and traditional steaming vats (Koshiki). Despite being a small brewery, their technical prowess is among the best in the nation, winning numerous Gold Medals at the National New Sake Awards and Nanbu Toji Association competitions. Each drop, brewed from rice and water nurtured by Aizu's rich nature with sincere craftsmanship, plays a perfect harmony of sweetness, umami, acidity, and bitterness.
