Inaba Shuzoten, founded in the late Edo period (Keio era, 1865-1868), is a brewery specializing in pure rice (junmai) sake located in front of Mt. Tsukuba Shrine. They pump up spring water called "Goshinsui" (sacred water) of Mt. Tsukuba from the premises and use it for all processes from washing rice to brewing.
Since 2000 (Heisei 12), the 6th generation, Nobuko Inaba, has taken over the brewery as a female toji (brewer) and practices hand-made sake brewing that spares no time and effort. The sake brewed through careful processes, such as steaming rice early in the morning and staying overnight until pressing, features a delicate and gentle taste.
There is also a cafe and shop on the premises, continuing to transmit the charm of local sake to people visiting Mt. Tsukuba.
