Okayama ZARU is a sake brewery unit formed jointly by five breweries from Kurashiki and Soja cities in Okayama Prefecture, all passionate young brewers.
They have undertaken an innovative project of visiting the headwaters of the Takahashi River, Okayama's "mother river," and using water drawn from near the source as part of their brewing water at each brewery.
By blending the traditional techniques of Bitchu Toji with the innovativeness of young brewers, they primarily use Okayama's "Omachi rice" to brew sake that emphasizes regional character. While utilizing the individuality and techniques of each brewery, they promote Okayama's sake culture from a new perspective under a common concept.
