Tsuruno Shuzoten, established around 1789–1804, is a historic brewery with over 200 years of heritage, located in the Ukawa district of the Noto Peninsula, facing Toyama Bay. Led by Ishikawa's first female master brewer, Kaoruko Tsuruno, the brewery crafts sake that reflects the rich nature and warm spirit of the Noto region.
They persist in traditional handcrafted methods, using local rice and pure spring water. In a nod to local heritage, each bottle is adorned with textured, hand-pressed Noto Washi paper. Despite the devastating impact of the 2024 Noto Peninsula Earthquake, which left the brewery completely destroyed, they continue to uphold the light of 'Noto Sake' with an indomitable spirit and support from fellow breweries. The sake born from these challenges transcends being just a drink; it is a profound drop symbolizing community bonds and a beacon of hope for reconstruction.
