The founding family had been running a kimono business under the trade name 'Sumiya' since the Edo period, and this heritage is honored through the special 'Sumiya Yahei' series.
Leveraging their proximity to the birthplace of Omachi rice, they use 100% Okayama Omachi rice and an unfiltered method without activated carbon, producing sake with the natural golden-to-amber color and deep umami inherent to Junmai sake.
