They stick to traditional production methods that spare no effort, namely "Yamahai-jikomi" and "Wooden Bucket Tenbin-shibori."
Yamahai-jikomi, which nurtures natural lactic acid bacteria and yeast, realizes a profound taste where acid and umami harmonize.
The entire volume is pressed using wooden bucket Tenbin-shibori, which is rare even in Japan, creating a pure sake quality without off-flavors.
