Tosa Shuzo is a brewery operating in the "Tosa Reihoku Region," a mountainous area in northern Kochi Prefecture and the source of the Yoshino River flowing through the center of Shikoku. It is surrounded by the quiet natural environment of Lake Sameura, known as the water jar of Shikoku.
It insists on brewing "local sake" (sake of the land) utilizing blessed water resources and nature, using local pure rock spring water for brewing water and sake rice grown in local terraced rice fields for ingredients. It also actively engages in traditional brewing techniques such as Kimoto and Yamahai, facing sake sincerely with small-batch handmade production.
