Okuda Shuzoten

Founded in 1673, Okuda Shuzoten is one of Akita's most venerable breweries, boasting a history of over 350 years.
Located in Kyowa, Daisen, the brewery building is a National Registered Tangible Cultural Property. Today, the 18th-generation owner and his wife run the small-scale yet ambitious operation. Their most distinctive feature is the use of "MS3," a unique wild yeast collected from the ancient brewery beams where it has lived for three and a half centuries. Combined with pure water from the Ou Mountains, it produces a one-of-a-kind aroma.
Embodying "learning from the past to create the new," they refine modern sensibilities within historic walls. Their sincere commitment to working with local young farmers speaks volumes of the depth and future hope of Akita's sake culture.
