Pukupuku Shuzo, based in Odaka, Minamisoma, Fukushima, is an innovative brewery with a vision to "increase fields on Fukushima's coast through sake," linking regional revival with sustainable agriculture.
Founder Tetsu Tachikawa, formerly the first head brewer at "haccoba," established this brewery to practice natural fermentation (no added lactic acid or yeast) using wild yeast living in the cellar—a traditional method from the Edo period.
They pioneered a new genre called "Hopped Sake," merging low-polished Junmai sake (90% polishing) made from Fukushima rice with beer hops. This creates an innovative drink that melts boundaries, fusing rice umami with refreshing hop aromas.
