Hananoseki Shuzo founded in the Maizuru district of Fukuoka City, starting sake brewing under the brand "Kono Mi" at the time of its founding. It used a red brick building, which was revolutionary for that time. Later, the brand was renamed "Hananoseki" after a line from a haiku, "Iroka tsunagu hana no seki" (The flower barrier connecting color and scent).
Due to the urbanization of Fukuoka City making it difficult to secure high-quality water, it moved to the Kanzeonji district in Dazaifu City. This relocation enabled the use of Dazaifu's rich water sources.
Paying respect to the founder's name, it also produces the Daiginjo brand "Okiya Gishichi." While protecting traditional techniques, it continues brewing that harmonizes with Fukuoka's food culture.
