Higashi Shuzo, established in 1860, is a brewery in Komatsu City with a history spanning over 160 years. Although it operates on a small scale with an annual production of about 300 koku (approx. 30,000 1.8L bottles), it maintains a 'quality-first' philosophy by performing every step of the brewing process by hand with meticulous care.
The brewery building is designated as a National Registered Tangible Cultural Property and is recognized as a component of the 'Japan Heritage' representing Komatsu's stone culture. Sticking to a strict '100% Ishikawa-sourced' approach, they use rice, water, and yeast exclusively from Ishikawa Prefecture. Brewed with underground water from the sacred Mount Hakusan, their sake features a pure flavor that seems to condense the very terroir of Ishikawa. Their flagship brand, 'Shinsen,' has received high acclaim internationally, including the Platinum Award at France's Kura Master. It is a formidable brewery representing Komatsu, evolving alongside its historical architecture.
