Chiyonosono Shuzo is a historic sake brewery located in Yamaga City, Kumamoto Prefecture, brewing sake that takes advantage of the abundant water resources of the Kikuchi River basin. The brewery uses subterranean water from the Kikuchi River for brewing, and its soft water produces a gentle, tender sake character. For sake rice, the brewery focuses on Kumamoto Prefecture-grown rice, and notably has revived the legendary rice variety called Shinriki, pursuing distinctive brewing with it under the name Kumamoto Shinriki. While preserving traditional handcrafted techniques, the brewery has introduced modern equipment for temperature and hygiene management to improve quality.
