Tokyo Station Sake Brewery is a one-of-a-kind facility located within a train station, serving as the world's first in-station brewery. Operating in a compact space of just 22.8 square meters, the brewery performs all stages of the sake-making process on-site, with a mission to share the charm of traditional brewing with the many people passing through the station. Located in the B1 level of JR East Tokyo Station, combined with Hasegawa Saketen in Gransta Tokyo, the facility features a glass-walled viewing area where visitors can observe the brewing process and taste fresh, unfiltered doburoku.
The brewery's signature is its smooth-textured doburoku, brewed using the traditional three-stage fermentation process (san-dan shikomi) just like standard sake, typically with a beginner-friendly alcohol content of around 7%. Their popular 'Fruit Doburoku' series changes seasonally (featuring flavors like pineapple, peach, grape, and honey lemon). These seasonal offerings use fresh fruit juice and have a lighter 5% alcohol content, striking an exquisite balance between natural fruit sweetness and the gentle acidity of the doburoku.
