Tomizawa Shuzoten, founded in 1716 with over 300 years of history in Futaba Town, Fukushima, is now a symbol of hope that achieved a miraculous revival in Seattle as "Global SAKE." Once brewing "Shirafuji" just 3.5km from the nuclear plant, the 2011 earthquake and accident designated Futaba Town as a difficult-to-return zone, making brewing seem hopeless.
However, what the brewery family rescued from the brewery at the risk of their lives was 123 bottles of "Shirafuji Yeast" passed down for generations. Holding this treasure, they sought a domestic restart but were blocked by licensing barriers. Unyielding, they decided to challenge again in Woodinville, outside Seattle, Washington, USA, which has a similar climate. In 2023, after 12 long years, they began a new history as "SHIRAFUJI SAKE BREWERY."
The new "SHIRAFUJI" brewed in Seattle is a unique personality where traditional yeast and local terroir fuse, resulting in a brilliant fruitiness like white wine resonating with the gentle sweetness of Futaba tradition. Overcoming hardships, they are true standard-bearers of reconstruction, broadcasting the soul of Fukushima and Futaba to the world with an indomitable spirit.
