Located in Daigahara, Hakushu-cho, at the foot of Mt. Kaikoma in the Southern Alps, famous as the "Mountain of Water," they use its clear underground water for brewing.
The trade name "Shichiken" is derived from the transom of "The Seven Sages of the Bamboo Grove" received from the lord of Takato Castle in 1835 (Tenpo 6).
While protecting traditional sake brewing, they are also globally acclaimed for innovative initiatives such as sparkling sake with secondary fermentation in the bottle and collaborations with Alain Ducasse and Suntory Hakushu Distillery.
