Sudo Honke is said to be the oldest brewery in Japan, founded in 1141 (Eiji 1) during the Heian period. With the family motto of "Sake, Rice, Soil, Water, Trees," they are thoroughly particular about all elements in sake brewing.
All rice used is new rice (first grade or higher) harvested within 5 months, cultivated in their own fields and by contract farmers. The water uses underground water gushing from a well on the premises, and the basis is to provide raw sake without filtration.
It is a brewery representing Japan that continues to disseminate sake culture to the world by fusing tradition and innovation.
