Echigoshuzoujou

Echigo Shuzojo is located in Kuzutsuka, Kita Ward, Niigata City (formerly Toyosaka City), and is a brewery that conveys the traditional techniques of 'Nozumi Toji,' one of the origins of Echigo Toji. They use 'super-soft water' (around German hardness 1), which is a rare water resource even in Niigata, from the underground water of the Agano River as brewing water.
Through brewing that makes the most of this 'super-soft water' and the severe winter cold, they pursue the 'ultimate light and dry' style that is the true essence of Niigata sake. Specific name sake accounts for a large portion of their production, and they have a particularly strong commitment to Junmai sake, achieving a surprisingly clean and sophisticated sharp finish while making the most of the umami inherent in rice. Fusing traditional skills with the water of heavenly blessing, it is a powerhouse brewery that is loved by the region but also makes its name known nationwide.
