Tamamizu Shuzo is a brewery in Takata-machi, Miyama City, Fukuoka Prefecture, founded in the 11th year of Meiji (1878). After a temporary suspension during the war, it was revived in the 30th year of Showa (1955). Since then, led by the 5th generation owner Shigeru Yamashita, they have upheld the philosophy of "Natural Brewing" and continued sake brewing that utilizes the power of nature, eliminating machines and artificial operations as much as possible.
The greatest feature is the revival cultivation of the phantom sake rice "Shinriki" which was popular in the Taisho era, and the production of Junmai Daiginjo using it. Since most of the production is consumed locally, it is known as "true local sake" that is rarely seen outside the prefecture.
