Sato Shuzoten, founded in 1844 in Ogose Town, Iruma District, Saitama Prefecture, is a historic brewery nurtured by the rich nature and clear streams of Okumusashi. Located very close to "Ogose Bairin," famous as one of the three major plum groves in Kanto, it has continued honest brewing rooted in the community for nearly 180 years.
The greatest commitment is "hand-made small-batch brewing" that mass production can never achieve. By skilled craftsmen brewing while confirming the water absorption and fermentation state of each rice grain with five senses, it achieves both rich rice umami and a surprisingly crisp, light finish. For brewing water, it uses clear underground water pouring from the Okumusashi mountains, and the softness of that water gives the sake quality a gentle and calm expression.
