Murashige Shuzo has been dedicated to sake brewing, emphasizing handmade quality with a motto of 'Quality First,' since inheriting the prestigious Morinoi Shuzo Co., Ltd., founded in the early Meiji era. The brewery is located in a cold, clear mountainous area about 5km upstream from Kintaikyo Bridge, one of Japan's three most famous bridges, utilizing abundant water for its brewing.
They have two types of water sources from the underground flow of the clear Nishiki River: the ultra-soft 'Ganryu Well' and the hard water 'Kannon Well' springing from limestone strata, which they use according to the desired sake quality. They also practice sake brewing that emphasizes regionality, such as using locally produced sake rice 'Saito no Shizuku' for their ingredients.
They launched the 'eight knot' series, brewed with the phantom 'Kyokai No. 8 yeast,' and have continued to challenge themselves by fusing tradition and innovation, winning medals in the SAKE category of 'IWC2021.' Aiming for the ultimate sake that shines in the next generation, young Toji (master brewers) are pioneering new possibilities.
