Hanayoi Shuzo is a brewery founded in 1899, located in Soryo-cho, Shobara City, in the northern part of Hiroshima Prefecture. The current president and 4th generation owner, Mr. Tanimoto, also serves as the Toji (master brewer).
While Hiroshima is strongly associated with "soft water," this region is rare for its "medium hard water." This water, combined with the severe cold climate where temperatures drop to -17°C in winter, creates Hanayoi's unique crisp sake quality.
It features unique sake brewing that maximizes the benefits of Shobara's climate and environment, such as the representative "Dob" (Junmai active sake) and vintage sake aged for a long time without refrigeration facilities.
