Otoyama Shuzoten, founded in 1865, is a prestigious brewery that has marked the history of Aizu Misato Town. While production was suspended for nearly 20 years due to the absence of a TOJI, it made a miraculous comeback in 2021 through the hands of Yasushi Kobayashi, the nephew of the previous owner.
Once boasting one of the prefecture's largest scales at 3,000 koku annually, the venerable brewery's new concept for its fresh start is "Sake that makes everyone a 'Wa' (Harmony/Circle)." To prevent the almost extinguished flame of brewing from dying out, Mr. Kobayashi trained from scratch at the Fukushima Prefecture Sake Academy and prominent breweries in the prefecture, challenging himself to brew sake expressing the "present Aizu" with young sensibility.
Using local "Yume-no-Ka" rice, every drop—imbued with Aizu's crystal-clear air, pure water, and gratitude to the local people who supported the revival—is a symbol of the "New Aizu Otoyama." While inheriting traditional techniques, they aim to spark conversations and expand a mellow circle of happiness. It is a brewery that brews a moving story where Aizu Misato's terroir and indomitable passion melt together.
