Shimonoseki Sake Brewing is a brewery in Shimonoseki City, Yamaguchi Prefecture, established in 1923 (Taisho 12) by gathering 445 local farmers. They use medium soft water flowing further below the granite located 160m directly under the brewery as brewing water.
In addition to sake such as the representative brands 'Sekimusume' and 'Kaikyo', they manufacture and sell 'Fuku no Hirezake' using torafugu (tiger pufferfish), a specialty of Shimonoseki. In recent years, they have also focused on Junmai-type premium sake such as Junmai Daiginjo 'Shido' and Junmai Ginjo 'Kurabito no Jimanzake', and have received high praise at domestic and international liquor competitions.
