It began when Yojiue-mon Shibata, who came from Noto in Ishikawa Prefecture, opened the Shibata Sake Store, and it is known as a pioneer of the sake industry in Hokkaido.
The brewery uses underflow water from the Toyohira River, characterized by being soft water with iron content only 1/10 of regular tap water.
They use Hokkaido sake rice grown by contract farmers in Shintotsukawa Town and employ a 'three-stage rich brewing method' to create sake with refreshing acidity.
Its flagship brand is 'Chitosetsuru'.
