Blessed with a rich water vein within the premises, they pump up subsoil water from the Suzuka River from their own well to use as brewing water.
Insisting on all-pure rice brewing, funa shibori (wooden tank pressing), and absolute "no filtration" without any carbon filtration, they directly convey the original umami and richness of the rice.
Their flagship brand "Fuji no Hikari" is derived from the founder's reverence for Mt. Fuji, projecting its purity and nobility onto the sake.
