It is one of the rare breweries in Japan that performs every step of the process in-house, from cultivating high-quality sake rice to polishing and brewing. Approximately 90% of the rice used is grown in Ebina and neighboring districts using pesticide-free or low-pesticide methods. The 'Red Dragonfly' (Akatonbo) on their labels serves as a symbol of a healthy ecosystem and a promise of sustainable farming. The brewery produces exclusively Junmai sake, with over half of its production utilizing the traditional 'Kimoto' method. Their dedication has earned prestigious international and domestic awards, including Gold Medals at Kura Master and the Feminalise World Wine Competition.
