Mt. Koya is the sacred place of Shingon Esoteric Buddhism opened by Kobo Daishi Kukai, and sake has been called "Hannyatou" (Prajna water/Wisdom water) since ancient times. Although drinking alcohol is originally forbidden in Buddhism, sake was called "Hannyatou" as a medicine to warm the body in Mt. Koya, and there is a history that monks also secretly enjoyed it.
Hatsusakurashuzo's flagship brand "Hannyatou" was named as a brand inheriting the tradition and history of Mt. Koya. As the brewery closest to Mt. Koya, it has been loved by pilgrims and monks, establishing its position as a specialty sake of Mt. Koya.
Using the clear underground water of the Mt. Koya system as brewing water, they are brewing sake utilizing the climate of Kishu. They continue careful sake brewing in an environment blessed with a cool climate and rich water sources at the foot of the sacred peak Mt. Koya.
