Itami Oimatsu Sake Brewing

Itami Oimatsu Sake Brewing is a long-established brewery founded in 1688, boasting over 300 years of history in Itami, the birthplace of refined sake.
Inheriting the tradition of high-class sake brewing called "Gomen-shu" (permitted sake), where 24 major breweries in Itami were allowed to wear swords in 1697, Oimatsu is considered the most prestigious among them and was highly valued as sake dedicated to the Imperial Court and sake for the Shogun's table.
The brand name "Oimatsu" was named after an old pine tree that keeps its green even after a thousand years, symbolizing longevity and unchanging quality.
Itami is known as the place where refined sake brewing techniques were established, and in the Edo period, it became famous nationwide for high-class sake called "Itami Morozumi," characterized by a soft and elegant sake quality contrasted as "Nada's man sake, Itami's woman sake."
With brewing techniques inherited from generation to generation, it continues to be loved mainly locally as a light, slightly dry, and drinkable sake that one never tires of drinking.
