They use mountain water from the foot of the historic Takatenjin Castle, transported 3km to the brewery every day—a tradition maintained for over 150 years. They utilize the famous 'HD-1' Shizuoka Yeast, discovered within their own brewery, to create sakes with elegant, clean aromas and refined transparency.
The legacy of the late Shoichi Hase, one of the legendary 'Four Kings' of Noto Toji, is carried on by his apprentice, Minoru Shinba. Combining tradition with sustainability, the brewery uses 100% wastewater treatment and solar energy. Awarded the IWC Champion Sake and numerous Governor's Awards, it is a leading brewery of Shizuoka.
