It brews sake using underground water from the Niyodo River system, which has been repeatedly ranked number one in Japan as the "river with the best water quality" in water quality surveys by the Ministry of Land, Infrastructure, Transport and Tourism, and is praised as the "Miraculous Clear Stream" or "Niyodo Blue." Sake brewed with this clear and pure water is characterized by a transparent and crisp taste, with a reputation for passing smoothly down the throat.
The sake quality, which brilliantly embodies "Tanrei Karakuchi" (light and dry) representing Tosa sake, has fascinated many enthusiasts. The poet Yoshii Isamu, when living in a thatched hut in Tosa, loved Kochi Shuzo's main brand "Takiarashi" deeply and is known for composing the poem, "Takiarashi, when I pour this delicious sake, it resembles love, this drunken heart." That taste, colored by history and climate, is still inherited unchanged today.
