Using underflow water from Mt. Yotei and surrounding mountains, the brewery uses pure soft water that has bubbled up over more than thirty years.
They mainly use Hokkaido's representative sake brewing rice varieties—Suisei, Ginpu, and Kitashizuku—achieving 100% use of Hokkaido rice.
Specializing in 'Genshu' (undiluted sake) without added water, they are a producer highly regarded for their Junmai sake, having won multiple gold medals in the Junmai category of the Sapporo Regional Taxation Bureau Sake Awards.
