Hiyama Shuzo is a brewery located in Hitachiota City, Ibaraki Prefecture, founded in 1868 (Meiji 1). It is located near Seizan-so, the retirement villa of Tokugawa Mitsukuni (Mito Komon), the second lord of the Mito domain.
Using underground water from the Abukuma mountains and carefully selected brewing rice, they continue to make sake with a commitment to handmade brewing. The elegant Dozo-zukuri (earthen-walled storehouse style) brewery is part of the region's historical landscape.
In addition to traditional sake, they also produce shochu and wine, challenging diverse brewing that utilizes the local climate.
