Founded in 1877 (Meiji 10), Oiwa Shuzo Honten is embraced by a beech forest spreading at the southern foot of Mt. Daisen, the highest peak in the Chugoku region.
This area, called Oku-Daisen, is one of Japan's leading heavy snowfall areas and a village of famous water where clear water springs out. For the brewing water, they use super soft water with a hardness of about 20, nurtured over a long period by the primeval beech forest. The soft and gentle water is directly reflected in the taste of sake. Using sake rice carefully raised by local farmers, they continue to brew sake with a sense of transparency that reflects the nature of Oku-Daisen.
